Rum cocktails

A short list of classics worth mastering. Measures are a starting point — taste and adjust.

Classic Daiquiri

Light rum · shaken

You need

  • •2 oz (60 ml) light rum
  • •1 oz (30 ml) fresh lime juice
  • •¾ oz (22 ml) simple syrup

Method

Shake hard with ice and strain into a chilled coupe.

Fresh lime makes all the difference — skip the bottled stuff.

Mojito

Light rum · built

You need

  • •2 oz (60 ml) light rum
  • •¾ oz (22 ml) fresh lime juice
  • •2 tsp sugar or ¾ oz simple syrup
  • •6–8 mint leaves
  • •Soda water

Method

Gently press the mint with sugar and lime in a highball glass, add rum and crushed ice, top with soda and stir.

Press the mint, don't shred it — you want aroma, not bitterness.

Blue Hawaiian

Light rum · blended or shaken

You need

  • •1 oz (30 ml) light rum
  • •1 oz (30 ml) blue curaçao
  • •2 oz (60 ml) pineapple juice
  • •1 oz (30 ml) cream of coconut

Method

Shake (or blend) with ice and pour into a tall glass. Garnish with pineapple.

The unofficial house drink — it's in the name.

Piña Colada

Light or gold rum · blended

You need

  • •2 oz (60 ml) rum
  • •1½ oz (45 ml) cream of coconut
  • •3 oz (90 ml) pineapple juice
  • •Crushed ice

Method

Blend until smooth and serve in a chilled hurricane glass.

Mai Tai

Aged rum · shaken

You need

  • •2 oz (60 ml) aged rum
  • •¾ oz (22 ml) fresh lime juice
  • •½ oz (15 ml) orange curaçao
  • •½ oz (15 ml) orgeat
  • •¼ oz (7 ml) simple syrup

Method

Shake with crushed ice and pour everything into a double old-fashioned glass. Garnish with mint.

Rum & Ginger

Dark rum · built

You need

  • •2 oz (60 ml) dark rum
  • •4 oz (120 ml) ginger beer
  • •Lime wedge

Method

Fill a highball with ice, add ginger beer, float the rum on top and squeeze in the lime.

The simplest drink on the list — and one of the best.
